Google has finally introduced dynamic theming to the Gmail app icon on the notification shade of Android phones, as reported by Android Police. Previously, the Gmail icon was red, which made it stand out. However, the new dynamic theme color matching feature creates a more pleasing aesthetic.
If you have Version 2023.05.28.54044.3362 of the Gmail app, the Gmail icon on the notification shade will now match the colors of the Quick Settings lozenges enabled on your phone, which are derived from the device’s wallpaper. This means that the Gmail icon will take on the color theme of the active wallpaper.

I have the latest version of Gmail on my Pixel 6 Pro running Android 14 Beta 3, and now the Gmail icon on my notification shade matches the colors from my wallpaper. To change the color theme based on your wallpaper, follow these steps: go to Settings > Wallpaper & style and under the wallpaper preview, you’ll find color wheels that reflect the colors of your wallpaper. The main color is displayed on top, with accent colors below.

By tapping on a color wheel, you can see the main color fill in the Lock screen and Home screen pills at the top of the page. Additionally, the image of your wallpaper at the bottom will have a box around it with a circle inside that contains a white checkmark, which represents your main color theme.

To change the color of your Android app icons, go to Settings > Wallpapers & style and tap on Home screen in the upper right corner. From there, select the desired color wheel (remember, the main color is at the top), scroll down to Themed icon (still in Beta), and toggle it on. To check the version of Gmail you have installed, go to System > Apps > See all xxx apps. Scroll to find Gmail and tap on it to see the installed version at the bottom.
